Boozy Roasted Strawberry Lemonade Popsicles

It’s officially starting, popsicle season! Once I get started I can’t seem to stop with these.  I have a batch of chocolate sorbet popsicles in the freezer and decided to throw these together over the weekend once I started with the popsicle making.  The always talented and witty Billy at Wit and Vinegar posted a recipe for roasted strawberry lemonade and I knew it had to be made.  I hate to admit it, but I’ve had a fair share of strawberries this season and I need a break from eating them straight up. Usually, strawberries go right from package to mouth when I buy them, but after a while I get a little burnt out on them.  Roast those babies and make lemonade! Also, let’s just add a couple shots of booze while we are at it.

Up until a few years ago, I never even imaged roasting fruit, at first pass it sounds weird. Why would I put my fruit in the oven and make it all hot and caramelized? Oh wait, because it’s AWESOME. That’s why.

I also never really thought about making popsicles for the longest time, but it turns out to be a great way to use up odds and ends and also not turn on the oven.  It gives me a good excuse to mix everything up, pop it in the freezer, and resume my 30 Rock marathon. I’ve been going on a season after season marathon watching binge, The Office, Parks and Rec, and now 30 Rock.

I love the popsicle mold I’ve been using for the past couple of years (it’s this one). The only downside is that you have to run hot water over the pops for a minute of so before popping them out of the molds, but it’s easy to clean and store!

Boozy Roasted Strawberry Lemonade Popsicles

Ingredients

  • 2 cups strawberries, chopped
  • 2 teaspoons granulated sugar
  • Juice and zest of 3 lemons
  • 3/4 cup granulated sugar
  • 5 cups water
  • 2 shots of vodka (3 ounces)

Instructions

  1. Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchement paper or a Silpat, set aside.
  2. In a large bowl, combine chopped strawberries and 2 teaspoons sugar, toss together until strawberries are coasted thoroughly. Spread strawberries out on prepared baking sheet. Roast for 15 minutes. Remove from oven and set aside.
  3. In the bowl of a blender, combine the roasted strawberries, juice and zest of lemons, 3/4 cup granulated sugar, water and vodka. Blend until combined and most strawberry chunks and well blended. Pour into popsicle molds and freeze for at least 4 hours before removing.
